Their name comes from their shape: “orecchiette” translating to “little ear.” This pasta is created by forming small cubes which are then rolled over the thumb, forming that little dome for sauce-cupping. In Southern Italy, orecchiette is often paired with rabbit ragout as a holiday dish or dressed with tomato sauce and miniature meatballs.
