Letterpress roasted a test batch of Ucayali River Cacao from the first-ever harvest, late one night in the summer of 2015. These beans came from an area of Peru that isn’t usually associated with high-quality cacao. But, thanks to the exacting standards of award-winning cacao expert Daniel O’Doherty, they realised they had something special. Ucayali River Cacao pays farmers a premium for their best work, and the amount of commitment and care in the processing is unparalleled in the world. Letterpress has worked hard to offer the same degree of attention to detail to this bar.
