A delicious ‘guess it yourself’ pasta, based around Marella’s Spugnole pasta shape. It’s actually proprietary and the name translates to morel or sponge. Due to its curved, ridged, and fluttery outside, it is perfect for retaining sauce like Zambri’s classic tomato. Feel empowered to spice it up by quartering anchovy stuffed preserved peppers, Nocellara del Belice olives and a classic Parmigiano Reggiano.
